It’s time for the second season of my cooking show Making It Modern, where I recreate a vintage recipe and then use it as inspiration to make a new dish more suitable for the modern palate!
As a season opener I thought I would tackle what many consider to be the paragon of disgusting vintage food: Bananas in hollandaise sauce!

And yes, I both made and tasted it and it was everything I thought it could be, which was not good.
To make it modern I decided to take the idea of a savory banana dish with ham and hollandaise and turn it into a gluten free eggs benedict by substituting the banana for a plantain cake and then adding a poached egg.
With the earthy and slightly sweet plantain cake, smokey Canadian bacon, and silky hollandaise sauce, the whole thing turned out much more marvelous than the vile vintage victuals that inspired it.
