I am especially amused by today’s episode because it delves deep into the crazy that was my life growing up. The introduction is a bit longer than usual, because I felt it was important to explain the history of the vintage dish I am recreating: Pearl Onions in a Velveeta Cheese Sauce.
Doesn’t it look like just about the most disgusting holiday side dish ever invented?
I don’t want to spoil the video for you, but you have to see my reaction when I taste it for the first time. Trust me, you will laugh!
To create the modern version of the vintage dish, I decided to caramelize leeks and then bake them with freshly shredded Gruyere cheese. The result was my new favorite holiday dip which I have entitled: Cheesy Caramelized Leek Dip.
If you decide to make this for your Thanksgiving meal, be sure to cut back on the rest of your meal. I am positive this dip is going to be so popular with your guests, they are going to eat the whole thing before dinner is served!
