What isn’t as trendy is the combination of pumpkin with coconut which turns out was a popular medley in the recipes of the midcentury. I thought this sounded like a fresh take on an old favorite so I decided to recreate a vintage pumpkin coconut pie into a paleo pumpkin mousse!
The vintage pumpkin coconut pie ended up being delightfully light and the texture of the toasted coconut paired perfectly with the sweet squash. For the paleo pumpkin mousse, I whipped up cold coconut cream to create a dairy free alternative to a regular mousse and it turned out absolutely decadent!
I figure between both desserts you will have plenty of options for all the diets you are trying to juggle at your Thanksgiving feast.
