School is back in session and things are getting really hectic around here!
The last thing I need is to be slaving over a hot stove while cooking a dinner I know my kids probably won’t eat.
When I need to get something warm and filling on the table, one of my go-to recipes is nachos!
Today I am partnering up with my kid’s favorite condiment, Hidden Valley Original Ranch® to bring to you my Killer Ranchito Nachos. They are super easy to make and the best part is, the kids love it!
I made a fun video for you so you could see just how easy it is to make these at home.
See, I told you they were simple! And if you happen to have some left-over chicken, they are even easier to make.
Killer Ranchito Nachos
- 1 pound chicken tenders
- 1 packet Hidden Valley ® Original Ranch® Dips Mix
- 1/2 cup Hidden Valley® Original Ranch® Salad Dressing (recipe below)
- 1 cup chopped tomatoes
- 1/4 cup scallions
- 4 cups corn chips
- 4 cups shredded cheddar cheese
- Fresh cilantro to taste
Hidden Valley® Original Ranch® Dressing
- 1 packet Hidden Valley® Original Ranch® Salad Dressing & Seasoning Mix
- 1 cup milk
- 1 cup mayonnaise
Begin by dredging the chicken tenders in the Hidden Valley® Original Ranch® Dips Mix and cook them in a pan on medium heat for about 5 minutes per side. Let cool and then use two forks to shred. Set aside.
While the chicken is cooking, make the dressing by adding all of the dressing ingredients into a mason jar and shake to combine.
To assemble the nachos, place 2 cups of corn chips at the bottom of a casserole dish and crush to flatten. Then add half of the chicken, 1/4 cup of the Hidden Valley® Original Ranch® Dressing, half of the tomatoes, half of the scallions, and 2 cups of the shredded cheese. For the second layer you are going to do the exact same thing: first the chips, then the chicken, then the dressing, then the tomatoes, then the scallions, and end with the cheese.
Bake at 350 for around 10-15 minutes, or until the top is golden and bubbly.
