When it comes to exploring vintage food, the one we all like to joke about the most is a jello “salad”. What is the deal with combining the most disgusting of ingredients and then smothering it in gelatin?
I knew when I decided to create Making It Modern that I would have to explore this retro phenomenon and I wasn’t looking forward to it!
Instead of diving into something truly hideous, so I started with an “Emerald Salad” found in one of my vintage cookbooks. I liked the idea of jello with strawberries, and I thought it might be easier to create something modern with the flavors of lime, celery, and strawberries. Making a vintage dish is easy, the hard part is turning it into something new!
I really liked the way the fresh strawberry salad turned out and have made it a few times since we filmed this episode. My friends declared it their new favorite, though to be fair, they say that about pretty much everything I serve!
