I absolutely love fresh squeezed lemonade.
All of our local street festivals have a lemonade stand and I never miss a chance for a refreshing glass of icy, tart goodness. Why wait for the festival stands when you can make your own at home! This simple recipe takes a timeless treat to the next level with rich juicy raspberries and a little fizz.
First, make a simple syrup, which is the base for any lemonade. I added 2 cups of water and 2 cups of sugar to a pot to boil. Stir until the sugar is completely dissolved. I poured my syrup in a pretty Pyrex dish to cool.
Next, put a cup of raspberries in a dish and muddle them with the handle of a butter knife, if you don’t have a proper muddler on hand.
Go ahead and toss the berries in, give them a stir and let them steep in the warm syrup. Mmmmm!
While the raspberry syrup is cooling, juice a whole bunch of lemons to get one cup of fresh juice. My lemons were on the small end so I had to juice about 6 of them. You’ll also want some extra lemons for a pretty garnish.
Give the syrup a little stir and after it has cooled, strain out the raspberries. You can save them in the freezer for a morning smoothie or add to a muffin batter but mine didn’t last due to my raspberry loving little girl.
In a large pitcher, combine your 2 cups of raspberry syrup, 1 cup of lemon juice and an entire one pint bottle of club soda. Pour over ice and garnish with lemon slices and raspberries. Serve your sparkling raspberry lemonade in mason jars at your next barbeque or keep a whole pitcher to yourself for a wonderfully relaxing afternoon in the garden.
Sparkling Raspberry Lemonade
- 2 cups water
- 2 cups sugar
- 1 cup fresh lemon juice (about 5-6 lemons)
- 1 cup raspberries
- 1 liter bottle of club soda
Start by making a simple syrup by combining the water and sugar in a pot. Bring to a boil and stir until sugar is dissolved.
Muddle the raspberries and add to the syrup. Allow to cool.
Combine 1 cup lemon juice, raspberry syrup and 1 liter cup soda in a pitcher. Serve over ice.
