Sometimes a girl has got to get in a cheese and carb fix and what better way to accomplish this then by making and eating this Reuben Sandwich Dip with Pumpernickel Toast.
I mean look at that picture!
Can you see the creamy melted cheese surrounding the corned beef and sauerkraut? Simply divine. And then you get hit with the tang of the thousand island dressing and bam! Sheer comfort food overload.
Whenever my husband and I go out for date night, if there’s a Reuben sandwich on the menu, that’s what he always orders. I was never fan of sauerkraut or Swiss cheese before we met but this combination has definitely made me a convert! Reuben dip is everything you want in the melty, meaty sandwich but it’s layered in a casserole for a crowd to enjoy. We brought a dish of it to my mother in law’s church trivia night a few months ago and it was a big hit!
We’re supposed to bring a dish for his family’s Easter celebration and since everyone always brings a dessert or cold salad, I like to bring something hot, cheesy and savory that we can enjoy before the main meal is served. My husband’s first response was “Reuben dip!”
Reuben Sandwich Dip With Pumpernickel Toasts
2 cups shredded, cooked corned beef
1 16 oz jar sauerkraut, drained
1 pound Swiss cheese, shredded
1cup thousand island dressing
1 8 oz package cream cheese, softened
1 loaf pumpernickel bread
In deep 9 x 13 baking dish, coat the bottom with half of the sauerkraut
sprinkle corned beef and cream cheese/ dressing mixture on top. Follow up with the remaining sauerkraut and finish it off with Swiss cheese
Bake at 350 degrees for 25-30 minutes until cheese is melty and slightly browned. While the dip is baking, cut a loaf of pumpernickel toast into approximately 2 inch thick slices (big enough for dipping). Brush with olive oil (flavored oil is delish!) and bake on a cookie sheet till just toasty.
