Today I am going to show you a neat trick I learned which will take your crock pot and slow cooker recipies to the next level! It might not seem like it would make much of a difference, but I assure you it does.
To show you this trick I am also teaching you my new favorite easy weeknight meal: Chicken Pomodoro.
Chicken Pomodoro is essentially chicken in a tomato cream sauce and I am telling you, it is amazing! Who knew something so simple could taste so good? I serve it over pasta because my kids are noodle obsessed, but I feel as if this could easily be made for company and served with cheesy polenta. Oh my goodness, my mouth is watering!

Chicken Pomodoro In The Crock Pot
- 1 medium sized onion chopped
- 6 oz can tomato paste
- 4 cloves minced garlic
- 1 Tbsp oil (I used olive oil)
- 1/2 tsp Italian herbs
- pinch red pepper flakes
- 1/2 cup heavy cream
- 2-4 boneless, skinless chicken breasts
- *pasta for serving
- *basil for garnish (optional)
Place first 6 ingredients into a microwave safe bowl and cook in the microwave for 2 minutes. Stir and cook for another 2 minutes. Stir and cook for another minute for 5 minutes total.
When finished cooking in the microwave, mix in the cream and then place into the slow cooker.
Place chicken inside of the mixture (if sauce is thick you can rub it all over the chicken before cooking) and cook for 2 1/2 to 3 hours on low.
Serve over pasta with a garnish of fresh basil!
