One of my favorite recipes for any holiday or party is my hot spinach artichoke dip. In my family, our holiday meals are typically served pot luck buffet style. Everyone is assigned a dish for Thanksgiving at our Halloween get-together so we all know what to bring and what to expect. Since over half of our family members bring a dessert, I want to be practical and bring a hot, savory appetizer that we can enjoy while we hungrily await for diner to be served.
Since I’m usually in a hurry and don’t have time to fuss over my dish, this is my go-to. It can be prepped ahead of time and stored in the fridge till it’s ready for the oven, or you can toss everything in a crock pot with a liner and let it go. Lighten this dip up by using low fat mayo and cream cheese.
- 2 8oz packs Frozen spinach, thawed and drained
- 1 package cream cheese
- 2/3 cup mayonnaise
- 1 cans artichoke hearts, drained and diced
- 3 cups shredded cheese (asiago, parmesan, mozzarella, romano)
Soften cream cheese in the microwave for 30 seconds. Combine mayo, cream cheese and shredded cheese in a large mixing bowl.
Add diced artichoke hearts, drained spinach and a bit of salt and pepper
Spoon mixture into a pie pan or baking dish and bake for 10-5 minutes at 350 degrees.
Remove from oven after 10 minutes and stir, bake for another 5 minutes
In the final few minutes of baking, turn on the broiler to brown the top
Serve with tortilla chips, pita chips or fancy holiday crackers. It’s also great on a grilled chicken sandwich!
