When I was twenty years old I had the most amazing opportunity to intern on a movie called Heaven’s Prisoners starring Alec Baldwin, which was filmed in New Orleans. My father was a camera operator on the flick, so he managed to talk the wardrobe department into taking me on as the assistant to the on-set dresser. Needless to say, the whole experience was an absolute hoot, and it ended up being my chosen profession for a few years.
In addition to New Orleans being a career changing event, it was also the first place I ever had Thai food! I know, it is totally strange that I would have to go to the South to experience Thai food, but that is just the way it happened. I was instantly smitten with the zesty and vivid flavor profiles, and I especially loved the abundance of fresh herbs in each dish I tasted. I decided to try and recreate their traditional flavors in the Thai steak tacos by using lime juice, cilantro, mint, and ginger to really brighten up each flavor component.
I serve these Thai steak tacos family style, so each person in my family can make their own tacos according to their individual preferences. The kids love “playing” with their food and it is amazing how many different combinations they came up with. My favorite was the rice, steak, mango, cucumber, mint with a little bit of sriracha sauce.
Speaking of rice, I think it is the perfect accompaniment to the steak tacos. Often times I find I forget to make the rice, which takes at least 20 minutes, so I use UNCLE BEN’S ® READY RICE ® Jasmine and doctor it up by using freshly squeezed lime juice, coconut milk, and chopped cilantro. It only takes a few minutes and always comes out cooked perfectly.
Thai Steak Tacos With Cilantro Lime Rice
Ingredients (serves 4)
- 1.5 pounds sirloin steak
- Butter lettuce separated into leaves and rinsed
- Cucumbers sliced into thin strips
- Mango sliced into thin strips (optional)
- Fresh basil, cilantro, and mint
- Marinade/dipping sauce
- 3 Tbsp fresh lime juice
- 3 Tbsp soy sauce
- ¼- ½ tsp sriracha sauce or other hot sauce
- 1 tsp fish sauce (optional)
- 2 tsp fresh ginger grated or minced
- 2 cloves garlic pressed or minced
Cilantro Lime Rice
- 1 packet UNCLE BEN’S ®READY RICE ® Jasmine
- 1 tsp lime juice
- 3 Tbsp coconut milk (optional)
- 2-3 Tbsp chopped cilantro
Create the marinade by mixing everything together in a bowl. Pour off ¼ cup for the dipping sauce then use the rest to marinate the steak. I put mine in a plastic zip bag and let it sit in the fridge for three hours. You can leave it as long as overnight.
Once your steak is ready, you should either heat up an outdoor grill, or use an indoor grill pan on your stove. Cook the steak at a high heat for 3 minutes on each side. Then let sit for 5-8 minutes and slice thin.
While the steak is cooking, prepare your taco ingredients. I place each ingredient in a separate bowl so everyone can make their own tacos according to their specific tastes. Remember to put out the reserved marinade so you can drizzle it on the tacos right before you eat them.
While the steak is resting, you can make the rice. Follow the directions on the package, and once it is heated through you can add the lime juice, coconut milk, and cilantro. If you don’t have any coconut milk, don’t worry about it. I like both with and without the milk.
