You know the age old question, “sweet or savory”? My answer is always “savory” and the reason I always choose savory is because I love cheese. No seriously, I am totally obsessed. I don’t think there is a single cheese that I don’t like and I think the stinkier the cheese, the better. That isn’t to say I don’t also adore sweet, but if I had to choose, I will always pick savory. The good thing about this appetizer is it is a perfect combination of creamy cheese, crunchy nuts, and sweet-tart cranberries. Then the whole thing is brightened with a bit of fresh rosemary. Serve the dip with apple slices and crackers and you will have your guests begging for the recipe!
Cranberry Brie Dip
2 8 oz packages of brie cut into small pieces. Don’t bother using the expensive stuff for this dish.
1/3 cup dried cranberries
1/4 cup chopped candied pecans. If you can’t find candied pecans, just use regular ones
1 tsp fresh rosemary chopped
In a pot (I used a small iron skillet) combine the brie and the cranberries and let melt over a low to medium low flame. If you need it to melt faster, cover with a lid, but be sure to stir every now and again so the cheese doesn’t burn.
Once the cheese is melted, add the chopped pecans and the rosemary. Serve immediately with sliced apples and crackers.
*note: My brie didn’t melt perfectly, but with a creamier brie it should have been no problem. It didn’t affect the taste at all and was gobbled up in about 10 minutes!
