Today I am thrilled to share with you hoisin glazed chicken with cucumber radish slaw from one of my favorite cooking magazines: Cooking Light. I have been reading Cooking Light magazine for years because it is filled with exactly the kind of food I like to cook: fresh, healthy, and delicious. I have been on an Asian food kick for a while because my husband is trying to eat clean and he loves anything with veggies and soy sauce. So I decided to recreate one of the recipes from the Cooking Light special issues called, “Super-Easy Recipe Shortcuts”. I know many of us like to see pictures of our food, not just a video, so here is a step by step pictorial on how I made the hoisin chicken with cucumber radish slaw.
Start by mixing together 3 tablespoons of hoisin sauce, 1 teaspoon minced garlic, 1 tsp grated fresh ginger, 1 tsp fish sauce (or substitute soy sauce) and a few dashes of hot sauce. Then pour on top of chicken and let sit for at least 15 minutes or over night.
While the chicken is marinating, slice up some cucumbers, radishes, and cilantro.
Toss your veggies with 1 teaspoon sesame oil, 1 tsp rice vinegar, and 1 teaspoon soy sauce.
Cook your chicken on a hot grill pan or open grill until cooked through, usually 4-5 minutes on each side. Then serve on a bed of rice with the slaw as a side dish and enjoy!
