I’ve been on Pinterest almost since its inception because I was looking for a way to save all of the amazing recipes I see while I am surfing online. I have a ridiculous amount of recipes pinned and I actually go back and cook the ones that I think look the best. I’ve decided to share with you some of my favorite easy weeknight dinners that I have tried in the last few weeks.
Chicken with garlic balsamic tomatoes (here). This simple meal is incredibly easy to prepare.
Jerk shrimp tacos with pineapple salsa and pina colada crema. (here) *I made this using chicken tenders and I changed the crema to make it non dairy. I might have to make this again and post it here on the blog because the changes were fairly significant. But I can tell the original recipe is also the bomb!
Salmon with cucumber radish relish (here) I don’t even like salmon very much, but the relish really takes away any fishy taste you might get with an oily fish like salmon.
Turkey meatballs and spaghetti (here). This is one of my “go-to” meals because everyone in my family likes spaghetti and meatballs.
Grilled chicken with apricot-miso glaze. (here) I happened to have some chicken breasts, miso, and apricot jelly in my fridge so I whipped this up and it was enjoyed by my entire family!
