I have been on a slow carb diet for about five weeks, and it is going pretty well. I’ve lost about 8 pounds and I haven’t done one speck of exercise. But I am also totally craving both sugar and grains because neither are “allowed” on my diet. Technically I am not even allowed to have quinoa, which is one of my most favorite foods ever! I broke down and ate it last night by making a Thai quinoa slaw (seen below) and it was delicious! So I thought I would put together some of my favorite quinoa recipes for you dolls to enjoy since I am not supposed to be eating it. Just click on each heading to be taken to the recipe.

The dressing is the perfect blend of salty, peanutty, and sweet.
This is a light-tasting quinoa side dish. I find it goes well with heavy meats like fried chicken.
This is like a guacamole salad. I appreciate the fact I don’t need corn chips to enjoy it.
I make these every time I have leftover quinoa. They are amazing. I even eat them for breakfast sometimes.
This was a salad I made up a while back when I needed a Mexican inspired side dish for a dinner party I was having. This is a perfect pot-luck salad for the summer.
