For those of us who are Jews, we are at the tale end of Passover. This is the holiday where we don’t eat any leavened bread for eight days. That means no baguettes, no sour dough, no croissant, no cake, no donuts, and no bagels! But we do get to eat lots and lots of matzah. I have been on a low carb diet for a while now therefore I haven’t been eating any bread for at least six weeks, making this my easiest Passover ever. And the good news is I kinda love matzah, so I have been eating it for breakfast every day since Tuesday. Normally I just spread 1/4 of an avacado on it and sprinkle some salt, but I thought I would share with you my other favorite way to eat matzah. I spread some cream cheese (full fat, I don’t believe in low fat anything) slice some cucumbers, add some smoked salmon, and sprinkle on freshly chopped dill. A little squeeze of lemon over the top and I am on my way to breakfast heaven!
Sometimes I add a few capers, other times I add a touch of vinegar instead of lemon juice. Aren’t the colors so pretty together?
