Salted Caramel Apple Cupcakes

The other day I had the most wonderful salted caramel apple cupcakes! I wanted to recreate them at home but I didn’t want to make them from scratch. So I ended up using Duncan Hines spice cake mix and they came out heavenly! Here is how I did it:

Preheat the oven to 350

In a bowl blend the mix, 1/2 cup applesauce, three eggs, 1/3 cup veggie oil, and 1 1/3 cups water. Start on a low speed until moistened and then beat on medium for 2 minutes.

Here is what the mix looks like after 2 minutes.

Next, using a 1/4 cup measuring cup, pour the mix into a cupcake tray. I filled the holes about 3/4 of the way full.

I baked my cupcakes for 18 minutes and then tested for doneness. I found them fully baked after the 18 minutes, but I would be sure to check yours with a toothpick. I set the cupcakes aside and let them cool.

In the meanwhile I creamed two sticks of butter and a package of cream cheese (all at room temp) together.

Next I poured in 1/2 cup store bought caramel. I found mine at the end of the ice cream isle.

Then I started to add the powdered sugar. I start with 1 cup and then taste, I got up to 3 cups with this recipe. If you like it sweeter, add more.

I dont have any cool pastry tubes or nibs, so I just put the frosting in a large plastic bag and snipped off the end to pipe the frosting. It worked well but would have been prettier with a fancy nib.

Finally I sprinkled a little bit of salt on top of the cupcakes and served!

It happened to be really hot the day I made these so the frosting was pretty ooozy. However on a normal day these would be perfection. The spice cake had a hint of apple from the apple sauce, and it combined perfectly with the creamy caramel frosting. The sprinkle of salt added a savory snap and all together it was a big hit in my household. I have no problems with making cupcakes from scratch, but in this instance I like the mix better due to the excellent taste and ease of use.
