In this episode I make a strawberry-lemon icebox cake. It is seriously amazing and so easy. And the best part is you don’t have to go near an oven to make it! Here is the recipe:
Strawberry-Lemon Icebox Cake:
1 package cookies- I used lemon wafers but vanilla, chocolate or graham crackers would work as well.
1 package strawberries sliced
1 container lemon curd microwaved for 30 seconds at a time until loose.
1 16oz container whip cream, whipped with 1tsp vanilla and some powdered sugar to taste.
Lay a piece of parchment paper down in the container you are using (I used a loaf pan) with the tails hanging out.
Start by placing a small amount of whip on the bottom of the pan. This helps the cookies stick in place. Add the cookies in a single layer followed by more whip, then some of the lemon curd, and then some of the sliced strawberries. Continue in this manner- cookies, whip, curd, strawberries, until you get to the top of your container.
When you are finished, cover with plastic and place in refrigerator for a minimum of 3 hours and up to 24 hours. You can also freeze the dish and it will stay fresh for up to 6 months.
