Today’s video is all about a delicious corn and tomato soup with basil and basic grilled cheese sandwiches. This is what I call a ‘pantry meal’ because the dish consists of items I always have on hand in my kitchen which is perfect for those days I just don’t feel like going to the grocery store. Summer Tomato Soup:
1/2 red onion diced
1 28oz can crushed tomatoes
1 carton veggie stock
1-2 cups frozen corn
fresh or frozen basil
Saute the onion with a little olive oil for 5-7 minutes until onions are soft. Then add the can of crushed tomatoes. To thin the sauce and turn it into soup add 1/3 of the carton of stock and stir. Let it come to a boil then turn down heat to simmer while making the grilled cheese sandwiches. When ready to serve add the frozen corn and basil, stir, and enjoy.
Basic Grilled Cheese Sandwiches:
Sandwich bread (I used sourdough)
Sliced cheese (I used Havarti)
Butter melted in microwave
Using a pastry brush, apply the melted butter to the outside of the bread. Place the cheese in between the slices and then grill on a hot pan. After bread is toasted on the outside and the cheese is melted, flip the sandwich and toast the other side. Cut into triangles and serve with the hot soup.
