Hey look! We finally got a dining room table! I can’t show you better details until after the magazine comes out in June (oh, btw- this will be in the June issue!).
First I made a fruit salsa with cinnamon pita chips. I have seen this on Pinterest and just made up a finely chopped fruit salad, squeezed some orange juice over it and then opened a bag of pita chips. I am not a stickler for making everything from scratch, especially when I have a Trader Joes so close to the house!
For something sweet I did a version of this. I have had it saved on my Pinterest forever and really wanted to try it using a puff pastry instead of a bread dough. I let the dough defrost for about 40 minutes, then rolled it out a bit thinner and cut it according to the recipe. It totally worked! And it tastes amazing.
Finally, for something savory, I made a leek and potato with goat cheese quiche. I have made hundreds of quiches over the years, so I just made it up as I went along. Basically I sauteed the leeks in butter until soft, I had some boiled fingerling potatoes left over from dinner on Friday so I cut those up, dotted the bottom of the crust with some goat cheese, whipped up some eggs and cream and then filled the crust. I baked at 350 for about 25 minutes and voila! A nice quiche.
Do you think the magazine should hire me for their food section? Ha!
