It’s been a while since I have done a cooking post, so I thought this chicken pot pie would be perfect for a nice crisp autumn dinner. It is based on a recipe by Jamie Oliver whom I happen to be obsessed with at the moment. I have his book: Jamie’s Dinners: The Essential Family Cookbook and I love it so I got the Jamie Oliver’s Meals in Minutes and decided to try the chicken pot pie. Because I am kosher and we don’t mix milk and meat, I made a few substitutions. But the meal came out fantastic, and it was really easy. I have been having fun on Picnik with their collages, so I decided to format these dinners in a way that was easy to ‘pin’ on Pinterest. I made Jamie’s cauliflower macaroni with salad topped with his ‘insane’ dressing (it really was insanely good) from the same cookbook and tonight I am going to make his tomato soup and grilled cheese sandwiches. So far each meal has taken about 45 minutes to make, but if I made them again I think I could easily shave at least 10 minutes off because it is always easier to make something the second time, then the first.
