Another week, another meal plan. I read a post on The Vintage Wife wondering how to meal plan and I thought I would mention how I pick my recipes so others can learn from how I go about it. I have been in the mood for meatloaf, so that will be tonight’s dinner. Easy, one down- four to go. Then I check my Pinterest board to see if there is anything inspiring and there is! A nice recipe for slow cooker enchiladas. Then I decided we needed a pasta meal (my kids LOVE pasta) so I will be making an easy ‘fake meat sauce’ on spaghetti. Then I thought I should have a chicken meal but didn’t want to roast a chicken so I found this recipe in my ‘favorites’ and thought it sounded easy and delicious. And finally, of course, we will be having pizza on Thursday. And that, my dear kittens, is this week’s thought process on how I planned my menu.
Sunday: Meatloaf and mashed potatoes with peas (meat)
Monday: Crock pot enchiladas with salad and melon (vegetarian)
Tuesday: Rosemary lemon chicken with sugar snap peas and quinoa (meat)
Wednesday: Spaghetti with fake meat sauce and salad (vegetarian)
Thursday: Pizza! (vegetarian)
