This week I am in the mood to cook turkey meatballs. I will be making a double batch so I can freeze some for a quick meal later in the year. I am also trying a new recipe which I have dubbed ‘Asian roasted chicken’. This should make enough chicken for two meals this week. And then at the end of the week I will be cooking two standbys- veggie burgers and the ubiquitous pizza. Yum!
Sunday: Asian Roasted Chicken with Rice (meat)
Monday: Turkey Spaghetti and Meatballs with salad (meat)
Tuesday: Chicken Stirfry in Lettuce Cups (using leftover chicken) (meat)
Wednesday: Veggie burgers topped with caramelized onions and veggies with dip (vegetarian)
Thursday: Pizza night! (vegetarian)
