My sons are 6 and 9 and they finally eating salad! I used to make my husband and I salad and just have each vegetable separate on my sons’ plate, but the other day my eldest son asked for ‘salad’! My younger son, wanting to do everything his brother does, asked for salad as well. Needless to say, I was thrilled.
The only problem was each of us dislikes something in our salads. I don’t like carrots, my sons don’t like scallions and my husband doesn’t like endive. There was no way I was going to make 4 separate dishes. So today I decided to have a little cutting board salad bar! I just cut everything on a large cutting board and used that as a platter. The lettuce went in a big bowl and the garbanzo beans and feta cheese were already stored in glass containers, so all I had to do was add serving spoons. And voila! A cutting board salad bar.
The best part was both of my sons took more salad then I would have given them in the first place and they ate the whole thing!
